Mexico Recap.

I just got back from a week in Cancun and boy, it was gorgeous.

Sunshine for days and days.

I'm Back!

Well, hot damn it's been awhile! It's been a million years (give or take) since I've posted and it's about time I start again.

A lot of things have come and gone since I've posted including moving into my fab new place, my birthday and Halloween. In fact, I've been living (kinda-sorta) sans internet since I've moved in, with the exception of Andrew's wireless card that he uses for work. We are, in fact, going to set up internet but this internet break has actually been kind of nice.

I'll be back soon with more updates, but until I do...

I'll be going on a vaca soon and cannot wait to experience THIS!

My apartment is about 99% decorated but I have a few blank walls that need a little attention. Perhaps some visually interesting art for cheap?

Home Decor Lusting.

Currently lusting over this painting that I found at a random antique
store. Fingers crossed it's still there when I go back for it on Saturday.

I have been searching high and low for a cute bar tray. My plan
is to not fill it with candles, but shiny, beautiful bar-ware for
cocktails. This clear tray from CB2 is simple and chic.

I'm currently obsessed with Ikat dyed pillows. All of them. Yep.

Decorating Madness.



I am moving into a beautiful condo in a little over a month
and I've got decorating on my mind. I purchased this
couch today at Macy's after weeks of intense couch shopping
both online and in person. It's got that sleek, modern vibe that I dig.

less than half the price. It will be my new desk chair.

The Voice.



Is anybody else watching The Voice? Um, I was so not into it and then watched one episode and now I am sucked in. My favorite is Dia Frampton. Her voice is so outrageously unique. And how amazing is her Kanye West cover? Ugh, I love her.

After seeing Jason Segel's hilarious puppet antics in Forgetting Sarah Marshall I knew it was not the last time we'd see his puppetry. I cannot wait to see this new Muppets movie, particularly because Jason Segel is a part of the project. That and I am totally obsessed with Miss Piggy. She is really working that Chanel suit jacket.

Man Down.



Have you seen Rihanna's new video for "Man Down?" I love it. Some people are raising eyebrows over this video and calling it overly violent. Call me crazy, but the video is about shooting a man. And yes, there is a man shot in the video. If you watch the video in its entirety you will see the video is about rape and frankly, I'm glad somebody is talking about it.

"Rape is, unfortunately, happening all over the world and in our own homes and we continue to cover it up and pretend it doesn't happen," Rihanna said.

It's very Bob Marley "I Shot the Sheriff" esque. I hope Rihanna continues making music from her Caribbean roots and speaking up about important topics. I'm diggin' it.

I was lucky enough to stay right on the beach.

We drank white wine spritzers and beer on the balcony.

We soaked up the sun at every given moment.

And we certainly did not count calories (eek)
while at Bayside Skillet and elsewhere.

Pork Chops with Pineapple Salsa.

As mentioned, I've been cooking a lot recently. I made a bangin' dish the other day that's perfect for the summer time; pork chops with pineapple salsa. The inspiration for this recipe is from Weight Watchers.

Ingredients:
1. One can of diced pineapple
2. Half a red onion, diced
3. One jalapeno pepper, seeded and finely chopped
4. One lime
5. Cilantro
6. Salt, pepper, allspice, red pepper
7. Pork chops

Combine the pineapple, red onion, jalapeno pepper, cilantro, lime juice, lime zest, salt, pepper, allspice and red pepper together for the salsa. The longer you let the flavors meld the more vibrant the flavors will be.

Use the pineapple juice from the can of pineapple to marinate the pork chops. Salt, pepper and season your pork chops to your liking and grill. Serve with pineapple salsa and rice for a colorful and extremely delicious dinner. You could easily use chicken instead of pork chops, if necessary. I also used some pineapple juice and cilantro in the rice also for a little somethin' somethin'.

Dinner Time.

In an effort to eat healthier, I have been cooking more and eating out less. I made this (if I don't say so myself) de-lish dinner tonight (and the other night too, eep!) and I wanted to share the recipe.

It's originally a Weight Watchers recipe so I can't take credit for it, but I did alter it quite a bit. I'm not really a 'follow the recipe' kind of girl, but here's an outline:

Ingredients:

1. Veggies; such as red bell peppers, onions, shredded cabbage, mushrooms (whatever you like and have on hand)
2. Garlic (fresh or ground garlic)
3. Ginger (again, fresh or ground ginger)
4. Fresh basil
5. Coconut milk (light coconut milk, if you can find it)
6. Thai curry paste, red
7. Soy sauce
8. Chicken breasts

To start, saute the chicken with garlic and ginger. While that is cooking, mix half a can of coconut milk with a tablespoon of red curry paste and a tablespoon of soy sauce. Add more or less curry paste depending on how spicy you like your food. When the chicken is nearly done, add the veggies to the saute pan with the chicken. Add the fresh basil towards the end. Pour the coconut milk mixture over the chicken and veggies and let simmer for about ten minutes. Serve with rice, cous cous or whatever you fancy.

Vacations.

I don't know about you but my vacations are sacred to me. I really value my personal time away from work and like to make the most of it.

I was fortunate enough to travel to the Dominican Republic recently (on my company's dime, none the less) and it only wet my appetite for another trip!

It's been a few years since I've been to Europe so I think that might be the next destination.

Where are you dying to travel to?

I've got new jewelry from a far away land! It reminds me of the
House of Harlow jewelry collection, which is full of geometric shapes.

This gift comes at a great time because I have really been on a jewelry
kick recently. I have been eying the vintage collection pieces from Erstwhile
Jewelry Co
. Their collection is so ornate and beautiful. And I am still completely
obsessed with this ring. It just might be my next big purchase...

Is This Your Jam?

I don't mean to be a major B but is Kim Kardashian's new song not one of the worst things you have ever heard? Look, I (not so) secretly love the Kardashian Klan (you see how I did that? Clan/Klan. I crack myself up!) but wow, this song is really bad.

Kim has always said Jennifer Lopez was her idol. Sounds like she is trying to follow in J Lo's footsteps with a clothing line, perfume, and now a song. What is next?

There are a lot of bad pop songs that I think are catchy and fun, but this is not one of them.

Even Paris Hilton's song was better. Check Kim's song out here.
