Pork Chops with Pineapple Salsa.

As mentioned, I've been cooking a lot recently. I made a bangin' dish the other day that's perfect for the summer time; pork chops with pineapple salsa. The inspiration for this recipe is from Weight Watchers.

Ingredients:
1. One can of diced pineapple
2. Half a red onion, diced
3. One jalapeno pepper, seeded and finely chopped
4. One lime
5. Cilantro
6. Salt, pepper, allspice, red pepper
7. Pork chops

Combine the pineapple, red onion, jalapeno pepper, cilantro, lime juice, lime zest, salt, pepper, allspice and red pepper together for the salsa. The longer you let the flavors meld the more vibrant the flavors will be.

Use the pineapple juice from the can of pineapple to marinate the pork chops. Salt, pepper and season your pork chops to your liking and grill. Serve with pineapple salsa and rice for a colorful and extremely delicious dinner. You could easily use chicken instead of pork chops, if necessary. I also used some pineapple juice and cilantro in the rice also for a little somethin' somethin'.

This is so similiar to a fish recipe Alex and I do. It has a canteloupe salsa on top; very refreshing!
